This week, our Tour of Italy takes us to Lombardy, a region of contrasts, where grand cities meet alpine landscapes, and refined cuisine is shaped by both land and tradition. Home to Milan, Italy’s fashion and financial capital, Lombardy is often seen as modern and fast-paced. But beyond the city, the region opens into serene lakes like Lake Como and Lake Garda, rolling countryside, and mountain villages where culinary traditions remain deeply rooted and quietly preserved.


A Region Defined by Balance

Lombard cuisine is known for its richness and structure, often built around butter, cheese, and slow, careful preparation. Unlike the olive oil-driven cooking of southern Italy, here you’ll find a cuisine shaped by cooler climates and alpine influence.


Spring on the Table


We begin with dishes that celebrate the freshness of the season: Zuppa di Asparagi and a Spring Pea Salad. Light yet full of flavor, they reflect a softer side of Lombard cooking, where simple ingredients are treated with care. These are the kinds of dishes that mark a shift toward brightness, toward renewal, toward meals that feel both nourishing and alive.


From the Mountains: Pizzoccheri-Inspired Pasta


One of Lombardy’s most beloved traditions comes from the mountain town of Valtellina, where pizzoccheri (a rustic buckwheat pasta) is a staple. Our Pizzoccheri-style tagliatelle draws inspiration from this dish, bringing together hearty textures and comforting flavors in a way that feels both rustic and refined. It’s a reminder of the region’s alpine roots, where food is meant to sustain and satisfy.


A Classic with Character

Pollo alla Valdostana is a dish that speaks to Lombardy’s proximity to the northern borders, where Italian and alpine influences meet. Traditionally layered with cheese and cured meats, it’s rich, savory, and deeply comforting. Paired with braised Tuscan kale, it becomes a dish that feels balanced—hearty yet grounded, indulgent yet thoughtful.


A Sweet Finish


To end, Torta Sbrisolona is a crumbly, rustic cake that originated in nearby Mantua. Made with a coarse, sandy texture and often enjoyed with a glass of wine, it’s a dessert that invites you to slow down. Simple, imperfect, and deeply satisfying, it captures the spirit of Lombardy in every bite.
