Liguria on the Plate

This week, our Tour of Italy takes us to Liguria, a narrow ribbon of coastline known as the Italian Riviera, where mountains meet the sea and every meal feels touched by salt air and sunlight. Stretching along the northwest coast of Italy, Liguria is a place of quiet beauty, pastel villages, and a cuisine shaped by both land and water. Here, cooking is light yet deeply flavorful, built on herbs, olive oil, fresh seafood, and a reverence for simplicity.
Where the Sea Meets the Table

In Liguria, the sea is never far, and it shows in the food. Seafood is often prepared with care and patience, allowing flavors to develop slowly and naturally. Fish is gently braised to achieve a tender, buttery texture—never rushed, never tough—absorbing the briny depth of olives, herbs, and white wine. It’s a style of cooking that feels effortless but is rooted in technique and time.
The Fragrance of Pesto

No ingredient captures Liguria quite like pesto. Born in Genoa, this vibrant sauce of basil, garlic, pine nuts, olive oil, and cheese is not just a condiment, but an identity. In traditional Ligurian cooking, pesto is often added at the very last moment, preserving the bright, aromatic perfume of fresh basil. The result is something unmistakably alive, a burst of green that transforms even the simplest dish into something memorable.
A Coast Reflected in the Glass

While Liguria has its own proud wine traditions, the spirit of the coast can be found closer to home as well. We’re proud to feature Costa Vineyards Pinot Noir, a local Mendocino gem that reflects the same coastal elegance and balance found along the Italian Riviera. It’s a beautiful reminder that great wine, like great food, is shaped by its surroundings.
Simple, Fresh, Timeless
Ligurian cuisine is defined by restrain; letting ingredients speak for themselves. It’s not about richness or excess, but about freshness, balance, and the quiet confidence of tradition. From the fragrance of basil to the gentle flavors of the sea, every dish feels like a reflection of the landscape it comes from.
